How I turned 1 meatloaf into 3 extra meals!

There are so many different meal ideas out there. The internet is full of recipe, cooking and baking websites! It's a bit overwhelming at times, especially if you're someone who doesn't cook. Growing up, I learned from my parents how to stretch a meal. There were 8 kids in my family, so there were a lot of mouths to feed! I only have 2 children, but I still like to stretch out my meals, because in case you haven't noticed, food prices have gone up a lot!
 I decided to try a recipe from Beachbody's The Master's Hammer and Chisel nutrition guide. It was a simple and tasty meatloaf that we had for supper. I decided to switch things up and used lean ground beef, which I've only used a handful of times. My kids are used to me only using ground chicken or turkey, so they noticed a difference in the flavour. They politely asked me to use those next time because they like those flavours better. LOL!
  • Meal 1:  Burrito. If you know our family, you know we LOVE Mexican food and once you see the meals I made, you will sense Mexican as the theme. LOL! I topped a whole grain wrap with spinach, cheese, salsa, guacamole and the meat. I wrapped up the burritos and put them on my Cuisinart Griddler for a few minutes to warm up.
  • Meal 2: I really love eating salads! I put the meat on a bed of spinach and topped it with salsa, cheese and guacamole.
  • Meal 3: Friday nights we usually have nachos for supper. I simply took Organic nacho chips and topped them with medium cheddar cheese and the rest of the left over meat and we had Greek yogurt and salsa on the side. I normally put veggies on my nachos, but that night it was a meat and cheese kinda night. LOL!
Voila! 3 meals made from 1 meatloaf. 

All of these meals are simple, quick, tasty and healthy (for the most part the nachos are healthy).
